Figs go well with honey, sweet balsamic vinegar, creamy blue cheese and goats cheese. This simple salad mainly included ingredients I needed up use up, but it is worth experimenting with other flavour combinations. The walnuts add a nice crunch, but you could as easily use pine nuts.
Ingredients (serves 2)
6 fresh figs (quartered)
1 handful of fresh spinach leaves
1 handful of mixed salad leaves
1 handful of walnuts (slightly crushed)
200g baby tomatoes (quartered)
2tbsp runny honey
1 glug of balsamic vinegar
1tbsp extra virgin olive oil
Combine all the green leaves before adding the tomatoes, figs and walnuts. Then mix the rest of the ingredients thoroughly for the dressing before drizzling on top.
