Creamy Mushroom Tagliatelle

This is a really easy midweek supper.

Ingredients (serves 2)

Tagliatelle – I used 4 nests, but it depends how hungry you are!
5 large flat field mushrooms
100g button mushrooms
Handful of parsley
3 cloves of garlic
50ml Single cream
50g Stilton
Vegetarian parmesan
Salt/pepper
10g Butter

Method

Get a pan of salted boiling water on the go before adding the nests.

Thinly slice the mushrooms in butter before adding the garlic. Make sure the garlic doesn’t burn.

Add the cream and Stilton and stir well so the Stilton melts.

When the pasta is al dente, drain and add to the creamy mushroom mix, along with the parsley and check the seasoning. Finish with a bit of vegetarian Parmesan when serving.Creamy mushroom tagliatelle
