Like hummus, coleslaw is one of those dishes that is so easy and cheap to make, and much, much better than the shop bought alternatives.
Ingredients
1 medium white onion
½ red cabbage
½ white cabbage
1 large carrot (grated)
75g mayonnaise
2tsp wholegrain mustard
Method
Finely shred the onion, red cabbage and white cabbage before putting in a bowl. Add the grated carrot. Combine the mustard and mayonnaise well before adding to the cabbage mixture. Mix well and add more mayonnaise if you prefer your coleslaw a little more ‘creamy’.
