Jerk Marinade

Jerk marinade goes really well on mushroom and tofu kebabs. Be sure to marinade the mushrooms in the jerk for at least 20 minutes before cooking. This is so the mushrooms soak up as much as possible before they go on the grill or BBQ.


3 scotch bonnets
1 tsp nutmeg
1 tsp cinnamon
4 tsp ground allspice
1 tsp fresh rosemary
4 tsp fresh thyme
3 tsp brown sugar
1 tbsp runny honey
1 big glug of rum
Good amount of salt and pepper
1 lime (juice)
4 spring onions
2 tbsp soy sauce


The method is really easy, simply put all the ingredients into a blender and blend well.
