Sweet Potato Patties

These patties are great for a light lunch with a simple salad.

Ingredients (for two)

1 large sweet potato
1 garlic clove
1 large red onion
½ inch of ginger
1 tsp chilli flakes
Salt / pepper
2tsp garam masala
1tsp bouillon powder
100g gram (chickpea) flour

Vegetable oil (to fry)


Firstly, peel the sweet potato and grate the potato into a bowl. Thinly slice the onion (as thinly as you can), and add to the potato. With the small grate in your grater, grate the ginger and garlic before adding to the mixture.

In a jug, add the gram flour, chilli flakes, garam masala, bullion power and salt and pepper with about 150mls of water. Give it a good mix before adding to the sweet potato mix and stir it in well so all the potato is covered in the batter.

Heat a frying pan with vegetable oil before adding the potato mixture in patti shapes – turning occasionally. Each one should take about 8 minutes to cook.
