Kale is a brilliant vegetable. It is packed with beta carotene, vitamin K, vitamin C, and rich in calcium. Unlike spinach which seems to go off as soon as I’ve found a place for it in the fridge, kale keeps for much longer without going soggy.
This snack is so easy to make and is a great alternative to crisps if you’re on a diet. It takes hardly anytime to make and you can use whatever spices you fancy.
Kale (as much or as little as you want – but remember that it shrinks quite a lot when cooking)
A good grind of salt
Make sure the kale is washed and properly dry before putting it in an oven proof dish. Drisle the olive oil over it with the salt, pepper, and chili flakes (or whatever spices you want to use). Give it all a good mix before putting into a hot oven for about 15 minutes.
