This soup is great if you’re stuffed up with a cold. It’s really healthy and full of things that will get your sinuses working again!
Ingredients
250g dried split red lentils
1 large carrot
2 sticks of celery
1 onion
4 cloves of garlic
1 red chilli
75g fresh ginger
1 tin of chopped tomatoes
1tsp sugar
100g curly kale
Salt / pepper
1tsp cumin
1tsp bullion powder
Oil
Crème fraîche (to serve)
Method
Finely slice the onion, celery and carrot and fry in some oil for about five minutes in a high sided pan. Then slice the garlic, ginger and chilli and add to the pan. Fry for a further few minutes before adding the cumin, bullion powder, red lentils, chopped tomatoes, sugar, salt, pepper and about two pints of water. Pop a lid on and leave it to simmer for about 15 minutes. By this point, the red lentils should have cooked through.
With a stick blender, blend the mixture so it is nice and smooth. Roughly chop the kale and add to the soup. Cook for a further five minutes.
Spoon into a bowl and add a dollop of crème fraîche on top.
