These are really easy to make and don’t require many ingredients. The pears will caramelise in the honey while the stilton will provide a lovely tangy aftertaste.
I used two different sized round pastry cutters, one smaller than the other. If you don’t have pastry cutters, you could simply improvise with different sized glasses.
Ingredients (makes about 12)
1 pear (it doesn’t matter if it is still quite firm)
200g stilton
Runny honey
1 tube of ready-made puff pastry
Pepper
Method
Pop the oven on to 180.
Unroll the puff pastry. With the larger pastry cutter, cut out 12 circles and put them onto a baking tray. With the smaller pastry cutter, score a smaller circle on the inside of the larger circles so there is now a rim.
Finely slice the pear into smallish chunks and put the slices into the inner circle of each tart. Add a small dollop of honey on top and then a good chunk of stilton. Finally, grind some black pepper over the top before baking in the oven for about 10 minutes.
