Use ripe tomatoes for this. Preferably ones that haven’t been in a fridge.
Ingredients
4 ripe tomatoes
3 spring onions
1 handful of chopped coriander
Juice of ½ lime
1 thinly sliced green chilli
Salt and pepper
Method
Roughly chop the tomatoes and coriander. Thinly slice the onions and chilli and combine all the ingredients. Leave to marinate for 30 minutes and serve at room temperature.
