Braised Rhubarb

Ingredients (serves 4)
700g of rhubarb (washed – cut into 3 inch chunks)
2tbsp honey
1tbsp brown sugar
2 star anise
1 cinnamon stick
A dash of Cointreau
Yogurt or ice cream (to serve)

Method
Put the rhubarb along with all the other ingredients (aside from the yogurt) in a high sided pan and leave to braise with the lid on for 25 minutes on a low heat. Stir occasionally to making sure it doesn’t stick to the bottom of the pan.

Serve warm with a dollop of yogurt or ice cream.
