Roasted crunchy chickpeas

If you’re looking for a homemade snack that is healthier than crisps, these roasted chickpeas are a lovely alternative and are really simple to make. They also keep for up to a week.

The ingredients listed below are for one can of chickpeas which works out to be less than a bowlful as the chickpeas shrink when they’re cooked.

1 can of chickpeas
1tsp salt
½tsp pepper
1tbsp cooking oil
1tsp cayenne pepper
2tsp garam masala
1tsp cayenne pepper
2tsp smoked paprika
Whatever spices you fancy!

Turn the oven on to 150 degrees.

Drain the chickpeas and pat dry with kitchen roll or a tea towel. In a bowl, combine the oil, salt, pepper and spices. Add the chickpeas and mix well, making sure they are all covered. Transfer into an oven proof dish and bake for 30 minutes. After about 15 minutes of cooking, stir the chickpeas about so they are evenly cooked.
