Raw ‘couscous’ salad

This is really easy to make, incredibly healthy and makes a great side salad for a BBQ. Instead of couscous, this recipe uses a whole cauliflower head that has been obliterated in a food processor. It works really well!

Ingredients (serves 4 as a side dish)
1 cauliflower
1 small red onion
1 carrot
1 pomegranate
Handful of fresh coriander
Juice of 1/2 a lime
1tbsp sesame seeds
1tsp sumac
1 small garlic clove
Salt and pepper


Put the cauliflower in a food processor and blend until light and fluffy. Put in a bowl. Then chop the carrot and red onion as small as you can. Add the red onion and carrot to the cauliflower along with minced garlic, pomegranate seeds, chopped coriander, sesame seeds, lime juice, sumac, salt and pepper. Mix well.

  1. This looks wonderful, but do you have any suggestions for those of us without access to sumac? (I had to look it up in a cooking dictionary as the only sumac I had ever heard of before is a poisonous weed in North America.) Perhaps another spice could be substituted?

    1. Hi there – sumac is a spice which is commonly used in Middle Eastern cooking. If you can get your hands on Za’atar (which has sumac in), you could use this instead, but I’m not sure where you are based and how readily available it is where you are. Sumac has a tangy / lemony flavour. Perhaps lemon pepper could work instead? Or you could grate a bit on unwaxed lemon rind into the mix.
