Carrot fritters with cumin yoghurt

These are really easy and quick to make. This recipe uses age old bed friends with cumin, carrots, yoghurt and coriander.

For the fritters
8 large carrots
Handful of fresh coriander
1 hot red chilli
2tbsp gram flour
2 eggs (beaten)
Salt and pepper
For the yoghurt
100ml Greek yoghurt
2tsp cumin
Small handful of fresh mint and coriander leaves
Juice of 1/2 a lime
Salt and pepper

Peel and grate the carrots and combine with the rest of the ingredients. Take a small handful of the mixture and squeeze in the palm of your hand before frying in a pan with some oil. Leave for about 5 minutes before flipping over to cook the other side for another 5 minutes.

Combine the ingredients for the yoghurt and give it a good mix. Spoon the yoghurt mixture over the fritters and serve with a crunchy salad.

    These look great, I’ve made courgette pancakes/fritters before but they’re so watery! Carrots are a good shout.
