Red lentil dal burger

The key to this burger is balancing the ingredients so it is firm enough that it holds its shape but not too much that it becomes dry.

Ingredients

200g dried red lentils
½ cup dry breadcrumbs
1 egg
1 onion
1 lemon
50g gram flour
1 thumb ginger
2 cloves garlic
1tsp chilli flakes
Salt and pepper
1 tsp turmeric
1 tsp garam masala
1 tsp ground coriander
Handful fresh coriander
Oil
Salt and pepper
Water (for boiling the lentils)

Method

Start by boiling then lentils in salted water. I usually need about one part water to two parts lentils but keep an eye on them. While the lentils are bubbling away, fry the onion in some oil before sautéing the garlic and ginger. Add all the spices and seasoning to the onion, garlic and ginger mix before leaving to cool.

Once the lentils are cooking through, run under cold water and make sure you drain them properly. Add the lentils to the spiced onion mixture before adding breadcrumbs, a beaten egg, sieved gram flour and the fresh coriander. Combine all the ingredients using your hands. Pop the mixture into the fridge to cool for about 20 minutes.

In a pan, heat some oil. Once the mixture has had time to cool, shape them into burger shapes (I use a cookie cutter to make them more round). The burgers will need about 5 – 7 minutes on each side.
