Jerk tofu is great when part of a larger Caribbean dinner party feast alongside rice and peas, mango salsa and griddled corn on the cob. At a recent dinner party of which there were many meat eaters, my jerk tofu went down just as well as the jerk chicken.
Ingredients (serves 2)
My jerk marinade
1 block of firm tofu
300g mushrooms
Cooking oil
Method
Start by pressing the tofu. This can be done by putting a weight on top (can of beans usually works) for at least 30 minutes to draw the water out but it depends on the instructions on the packet. Slice the tofu and fry in a pan for about ten minutes in cooking oil. Add the sliced mushrooms with the marinade and cook for 15 minutes. Add a bit of water if it starts to go dry.
Ooh I’ve been thinking for a while I’d like to try out a homemade jerk marinade – marinated tofu and mushrooms sounds perfect. Will definitely give this a go 🙂
